Peach, tomato , prosciutto and mozzarella salad
Peach, tomato , prosciutto and mozzarella salad

Serves 2 = Around 450 calories per serving

 


Ingredients

2 medium-size ripe peaches, halved, stoned and sliced

2 mozzarellas  drained 125g

200 g mixed baby tomatoes, halved

2 big tomatoes, sliced

10-20 fresh basil leaves

½ lemon, juiced

1 tbsp olive oil

4 slices prosciutto

salt and pepper

Tear the prosciutto into small pieces or wrap the quartered peaches.

Cook 4 slices prosciutto in a frying pan over medium-high heat for 2-3 minutes each side or until crisp. Set aside to cool.

Slice the big tomato and arrange on a platter.

Top with baby tomatoes, prosciutto, peach and mozzarella.

Top with fresh basil leaves and drizzle with the mix of lemon juice and olive oil.

Season with salt and pepper.
